  • 230 grams plain flour
  • 115 grams fine yellow cornmeal
  • 50 grams granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp table salt
  • 250 ml milk I used almond unsweetened
  • 2 eggs beaten
  • 70 grams grated mozzarella

    Step 1
  • Pre heat oven (fan assisted ) to 190° & grease & line a 8-9" pan
  • Step 2
  • Add eggs & milk together & mix
  • Step 3
  • Combine all dry ingredients together
  • Step 4
  • Pour egg & milk mix into dry ingredients and mix making sure all dry ingredients are wet
  • Step 5
  • Pour into tin & bake middle shelf for 20+ minutes until a cake tester pushed into centre comes out clean. Mine took 20 minutes
  • Step 6
  • Cool, turn out from tin then cut up into sizes required.
  • Step 7
  • Enjoy.i served mine with homemade ice cream.
