Ingredients: Itoko-ni Pumpkin and Azuki bean

  • 500 g pumpkin (with skin)
  • 100 g ready-made azuki bean jam
  • 200 ml water
  • 2/3 Tbsp soy sauce

How to Make Itoko-ni Pumpkin and Azuki bean

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Itoko-ni Pumpkin and Azuki bean in your home by yourself.

    Step 1
  • Cut the pumpkin in pieces (bite-size). I prefer leaving some skin as in the photo.
  • Step 2
  • Put the pumpkin in a pot, add the water and soy sauce and boil. When boiled, cover with a lid and keep cooking for 10-15 minutes. Turn the pumpkin in the middle if necessary.
  • Step 3
  • When the pumpkin gets soft, add the bean jam and cook for about a couple of minutes.
  • Step 4
