  • 3 lb Red skin potatoes, cut up (skin left on)
  • 4 tbsp Butter
  • 1/2 cup Milk, more or less to desired consistency
  • 1 tsp Garlic powder
  • 1/2 tsp Salt & pepper
  • 4 oz Can of diced green chilies
  • 6 oz Pepper jack cheese, grated
  • 1 each Smoked paprika, optional topping

How to Make Jacked Up Potatoes

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Jacked Up Potatoes in your home by yourself.

    Step 1
  • Boil the diced potatoes in salted water until they fall apart when pierced with a fork. 30 minutes or so.
  • Step 2
  • Drain potatoes. Add milk, butter, and spices. Smash by hand or whip with a hand mixer.
  • Step 3
  • Fold in the green chilies & cheese.
  • Step 4
  • Top with a dusting I smoked paprika, if desired.
  • Step 5
  • I served this with my chipotle chicken recipe and spooned the sauce over the potatoes! Yummmm
