  • 3 large chicken breasts, cut into bite size chunks
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 4 jalapeños, chopped (remove seeds for not so hot, leave seeds in if you like the heat)
  • 2 cans great northern beans, drained
  • 1 can corn, drained
  • 1 can petite diced tomatoes
  • 4 cups chicken stock
  • 1 pkg cream cheese
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1/2 tsp. red pepper (less if you dont want so much heat)
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • Optional toppings for serving: shredded cheddar cheese, green onions, sour cream, bacon

How to Make Jalapeño Popper Soup

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Jalapeño Popper Soup in your home by yourself.

    Step 1
  • Place chicken chunks in a large pot with a little bit of vegetable oil and add all seasonings; saute on medium high heat.
  • Step 2
  • Once chicken is half way cooked (still see some pink), add in red bell pepper, onion and jalapeño.
  • Step 3
  • Continue to saute until chicken is thoroughly cooked.
  • Step 4
  • Add in the chicken stock, corn, northern beans and tomatoes and simmer over medium heat for 15 minutes.
  • Step 5
  • Add in the cream cheese in chunks and continue to simmer until cream cheese is completely melted and blended in. Serve with toppings of choice. Enjoy!
