  • 2 cup vegetable oil
  • chicken
  • 8 chicken legs or 3 pounds of chicken
  • 2 tbsp salt
  • 2 tbsp black pepper
  • gravy
  • 2 cup boiling water
  • 1 tsp thyme
  • 1 tsp hot pepper sauce
  • 2 tsp ketchup
  • 3 clove garlic minced
  • 1 red pepper chopped
  • 1 bushell of scallons chopped (white part only)
  • 1 green pepper chopped
  • 1 onion, chopped

How to Make Jamaican brown stew chicken

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Jamaican brown stew chicken in your home by yourself.

    Step 1
  • Wash chicken with lemon juice and water and remove skin
  • Step 2
  • Season chicken with salt, black pepper, and then add onions, peppers, red peppers and garlic.
  • Step 3
  • Marinate over night or atleast an hour.
  • Step 4
  • In a dutch oven fry chicken until brown and cooked all the way through
  • Step 5
  • Once chicken is cooked remove chicken and pour out half the oil.
  • Step 6
  • To make gravy add green peppers onions garlic scallons to oil. Cook til onions are transparent.
  • Step 7
  • Add thyme, ketchup, hot pepper sauce and 1 cup of boiling water to gravy. Simmer for 5 to 7 min.
  • Step 8
  • Add cooked chicken to gravy and the cup of boiling water and simmer for 30min
  • Step 9
  • Serve with white rice and vegtables and sweet plantains
