  • 1 lb Sweet or hot Italian sausage
  • 2 tbsp Olive oil
  • 3 clove Garlic, sliced thin
  • 1 each Green bell pepper and orange bell pepper, coarsely chopped
  • 1/2 Sweet onion, coarsely chopped
  • 2 tsp Dried oregano
  • 1 Salt and pepper
  • 24 oz Passata
  • 6 oz Red wine (whatever you're drinking)
  • 3 Basil leaves, chopped
  • 1 lb Pasta (any kind)
  • 1 Grated Romano, Parmigiana or Locatelli cheese
  • 1 loaf Crusty Italian bread (optional, but highly recommended!)

How to Make Julie's Sausage Scallopini

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Julie's Sausage Scallopini in your home by yourself.

    Step 1
  • Brown whole sausage in a frying pan on medium/high heat with garlic and olive oil, about five minutes each side.
  • Step 2
  • After sausage is browned, remove from pan , set aside and add peppers and onions to pan. Sauté until softened.
  • Step 3
  • While peppers and onions are sautéing, cut up the sausage into 1 inch rounds.
  • Step 4
  • After peppers and onions are softened, add the sausage back into the pan with the peppers and onions, along with salt, pepper, oregano, passata, basil and wine.
  • Step 5
  • Cover pan and let it simmer on medium/low heat for about a half hour.
  • Step 6
  • In the meantime, cook pasta according to package directions
  • Step 7
  • Pour sausage mixture over pasta, top with grated cheese and serve with a loaf of Italian bread.
