  • 1 1/2 tsp granulated sugar
  • to taste salt and pepper
  • 3/4 cup dry quinoa
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups chopped fresh kale
  • 1 tbsp lemon juice
  • shredded parmesan cheese for garnish

How to Make Kale and Quinoa Minestrone

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Kale and Quinoa Minestrone in your home by yourself.

    Step 1
  • Heat olive oil in a large stockpot over medium heat
  • Step 2
  • Add onions, carrots, and celery, and saute for 5 minutes
  • Step 3
  • Add zucchini, red bell pepper, and green beans, and saute for another 2 minutes
