Ingredients: Kat's Cowboy Caviar

  • 3 cooked ears of corn, kernels sliced off (or 2 cups frozen corn or 1 (15 ounce) can of corn, drained)
  • 1 (15 ounce) can pinto beans, drained
  • 1 Roma tomato, chopped and seeded
  • 1 (15ounce) can black beans, drained
  • 1 avocado, peeled and chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 green or red bell pepper, seeded and chopped
  • 1/2 cup chopped, fresh cilantro
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 lime, juice of
  • 1 to 3 teaspoons chili powder. (start with 1 teaspoon, taste, and add more if desired)
  • 1/4 to 1/2 cup chopped onion (I use white, but you can use green) I use closer to 1/2 cup of a sweet onion.

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Kat's Cowboy Caviar in your home by yourself.

    Step 1
  • Combine all of the ingredients in a serving bowl and mix well.
  • Step 2
  • Tastes even better if you refrigerate and cover it a few hours before serving.
  • Step 3
  • Serve with tortilla chips.
