  • Batter
  • 1/2 cup Milk
  • 1/2 cup Water
  • 1 tbsp Sugar
  • 1 3/4 cup Cake Flour
  • 1/4 tsp Salt
  • 5 Eggs
  • 125 ml Butter
  • Topping
  • 1 Cooking chocolate
  • Filling
  • 250 ml Fresh cream
  • 1 tbsp Castor sugar

How to Make Kerry's chocolate eclairs

If you have prepared the ingredients needed, now time to start cooking. There are 17 steps you must follow to make Kerry's chocolate eclairs in your home by yourself.

    Step 1
  • Preheat oven to 180°C
  • Step 2
  • In a pot, bring milk, butter and water to the boil
  • Step 3
  • Add dry ingredients and mix until a ball is formed
  • Step 4
  • Take of heat and allow to cool to room temperature
  • Step 5
  • Once at room temperature, add eggs one at a time mixing in well after each one is added
  • Step 6
  • Pour mixture into a piping bag and pipe onto greased baking tin. Make sure you space them enough as they rise quite a bit.

  • You can smooth the edges with your fingers dipped in a bit of water
  • Step 8
  • Bake for 25 mins
  • Step 9
  • Take out and reduce oven to 160°C.
  • Step 10
  • Cut the eclairs down the side and place back into 160°C oven for another 5
  • Step 11
  • Melt cooking chocolate for the topping
  • Step 12
  • Whip cream and sugar until stiff and it forms peaks
  • Step 13
  • Take out eclairs and allow to cool
  • Step 14
  • Pipe whipped cream into cooled eclairs
  • Step 15
  • Dip/spread chocolate on top
  • Step 16
  • Its best to keep them in the fridge so that the cream doesn't melt
  • Step 17
