  • Crust:
  • 100 grams Biscuits
  • 50 grams Butter
  • No-Bake Cheese Batter:
  • 100 grams Cream cheese
  • 120 grams Plain yogurt
  • 150 grams Heavy cream
  • 60 grams Granulated sugar
  • 15 grams Lemon juice
  • 3 grams Gelatin
  • 15 grams Water
  • Kiwi Syrup:
  • 2 Kiwi
  • 10 grams Honey
  • 1 dash Lemon juice

How to Make Kiwi and Mousse No-Bake Cheesecake

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Kiwi and Mousse No-Bake Cheesecake in your home by yourself.

    Step 1
  • Cover the bottom of the plastic containers with aluminum foil. Add butter to a bowl, and melt in a hot water bath or in the microwave.
  • Step 2
  • Place the biscuits into a bag, crush, mix with the melted butter, and firmly press down into the bottom of the containers.
  • Step 3
  • Add softened cream cheese and granulated sugar to a bowl, and then add in the lemon juice once it becomes smooth.
  • Step 4
  • Dissolve the gelatin in water and place into a hot water bath. Add the heavy cream to another bowl, and whip until it thickens.
  • Step 5
  • Add the yogurt, gelatin, and the heavy cream from Step 4 to Step 3 in that order, and mix together.
  • Step 6
  • Spoon in the batter into the cups, smooth out the surface with the back of a spoon, and chill in the fridge until it solidifies.
  • Step 7
  • Make the syrup. Add the kiwi (discard the white cores), honey, and lemon juice (optional) to a bowl, and mash.
  • Step 8
  • Top Step 6 with the kiwi sauce from Step 7, and decorate with whipped cream or fruit if desired...
  • Step 9
  • This version uses heart shaped cups. Unfortunately the cups were too deep and I couldn't line the bottoms with the cookie base. You can use a sponge cake base instead.
