  • 500 grams a strong white fish fillet deboned.
  • 9 lemons
  • 1 salt and pepper
  • 1 red onion
  • 2 red capsicums
  • 2 green capsicums
  • 5 tomato's deseeded
  • 2 can coconut cream
  • 1 bunch coriander
  • 2 fresh chilli

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make kokoda (pron: ko-ko-n-da) in your home by yourself.

    Step 1
  • cube the fish into small bite size pieces
  • Step 2
  • sqeeze lemon juice over the cubed fish, enough to submerge the pieces
  • Step 3
  • keep the fish marinate in the fridge and marinate for upto 4 hours or over night, fish shud be cooked right through,
  • Step 4
  • dice all the vegetables and keep aside
  • Step 5
  • once fish is fully marinated drain lemon juice and discard, rinse under cold running water and add the fish to the diced vegetables.
  • Step 6
  • open the cans of coconut cream (be sure to shake can well) and pour over the fish and vegetable mix.
  • Step 7
  • chop coriander and season the mix to taste.
  • Step 8
  • season with salt and pepper, add chopped chilli if desired.
  • Step 9
  • stir the fish coconut cream mix and serve
