  • 2 cup pasta cooked
  • 1 cup vegetables cooked
  • 3 tbsp extra virgin olive oil

  • 1 clove garlic
  • 1/2 cup grated parmigiano-reggiano (or more to taste)
  • 1 each parsley to taste

    Step 1
  • Slice and chop onion and garlic.
  • Step 2
  • Add to pan with 3 Tbs of olive oil.(or more to taste)

  • Step 8
  • Take a plate, and flip the omelet.
  • Step 9
  • Slide back into pan and cook an additional 3 to 5 minutes.
  • Step 10
  • Remove from pan and garnish with parsley. Can be served hot or cold.
