  • 250 grams pkt choc ripple biscuits
  • 80 grams butter - melted
  • 1 tbsp vanilla sugar
  • 1/4 cup boiling water
  • 3 tsp gelatine powder
  • 500 grams cream cheese - softened
  • 1/2 cup caster sugar
  • 200 ml thickened cream
  • 4 mars bars - finely chopped.
  • 60 grams milk chocolate - chopped
  • 2 tbsp thickened cream
  • 1 tbsp brown sugar
  • 20 grams butter
  • 2 tbsp thickened cream .
  • 1 mars bar for garnish - finely chopped

    Step 1
  • Process biscuits until fine crumbs .
  • Step 2
  • Add the 80g of butter and vanilla sugar and process till combined .
  • Step 3
  • press the biscuit mixture over the base and half way up the sides of a 22cm round springform pan then refrigerate for at least 30 minutes to set .
  • Step 4
  • Place boiling water into a heatproof jug and sprinkle over gelatine and whisk with a fork until dissolved , set aside to cool .
  • Step 5
  • Using an electric mixer beat the cream cheese and the half cup caster sugar together until light and fluffy then gradually beat in gelatine and then the cream , beat until combined . then fold in the chopped up mars bars to the cheese mix .
  • Step 6
  • To make the chocolate sauce : place the chocolate and 2 tablespoons of the cream in a heatproof bowl and melt the chocolate until smooth , either in the microwave or over a pot of simmering water .
  • Step 7
  • To make the butter scotch sauce : place the brown sugar , 20g of butter and 2 tablespoons of cream into a small saucepan and stir on low heat , without boiling , until the sugar has dissolved .
  • Step 8
  • pour half the cream cheese mixture over the prepared biscuit base then drizzle half the chocolate sauce over followed by the butter scotch sauce and run a knife or skewer through the mixture to create a marble effect then top with remaining cream cheese mixture and chocolate sauce and butter scotch sauce and run knife or skewer through again to create a marble effect on top .
  • Step 9
  • refrigeratorate over night or until set . enjoy . :-) .
