Ingredients: Lasagna Roll Ups

  • For the sauce
  • 1 lb lean ground beef (or turkey)
  • 1 sweet yellow onion (diced)
  • 1 orange bell pepper (diced)
  • 3 carrots (finely diced)
  • 5 clove of garlic (minced)
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 Salt & Pepper (to taste)
  • 1 can of crushed tomatoes (28 oz)
  • 1 can of diced tomatoes (28 oz)
  • 1 can of tomato sauce (15 oz)
  • 1 cup beef stock
  • For the filling
  • 1 cup grated mozzarella
  • 4 tbsp shredded parmesan
  • 1 container ricotta cheese (30-32oz)
  • 2 cup finely chopped spinach
  • 2 eggs
  • 4 tbsp finely chopped parsley

How to Make Lasagna Roll Ups

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Lasagna Roll Ups in your home by yourself.

    Step 1
  • 1. In large soup pot combine meat and onions. Cook for 5 minutes.
  • Step 2
  • Add bell pepper, garlic, Basil, oregano, salt and pepper. Cook another 5 minutes.
  • Step 3
  • Add broth, tomato sauce, crushed tomatoes, and diced tomatoes. Bring to simmer for about an hour. (Optional: I have thrown in red pepper flakes for some kick)
  • Step 4
  • Once sauce has simmered for an hour cook lasagna noodles as directed on box. Lay noodles on wax paper to cool.
  • Step 5
  • Preheat oven to 350°. In a bowl combine and mix all ingredients for the filling. Scoop and place lengthwise in middle of noodle. Roll up and place seam side down in baking dish ladled with sauce. Top with additional sauce and parmesan cheese.
  • Step 6
  • Bake covered for 15 minutes. Uncover and bake for an additional 10 minutes.
  • Step 7
  • Serve with salad and French bread. Manga!!!
