  • 1 box lasagna noodles
  • Sauce
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 clove garlic, minced
  • 1 lb ground beef
  • 1 lb italian sausage
  • 4 oz chopped mushrooms
  • 28 oz diced canned tomatoes
  • 8 oz tomato paste
  • 1 tsp salt
  • 1 tsp pepper
  • 3 tbsp minced fresh parsley
  • 1 tbsp italian seasoning blend
  • Filling
  • 30 oz ricotta
  • 2 large eggs
  • 1 cup grated parmesan
  • 1 lb grated mozzarella
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp minced parsley
  • 1 tbsp italian seasoning blend

How to Make Lasagna Rollups

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Lasagna Rollups in your home by yourself.

    Step 1
  • Boil noodles till al dente. Drain and lay flat on foil or wax paper.
  • Step 2
  • Preheat oven to 350°F.
  • Step 3
  • In large pot heat olive oil over medium high heat. Add onions and garlic and saute for a couple of minutes. Add ground beef and sausage and stir until totally browned. Drain fat and add mushrooms, diced tomatoes, tomato paste, salt, pepper, parsley and seasoning. Reduce heat and simmer for 30 minutes.
  • Step 4
  • To make filling: combine ricotta, eggs, Parmesan, salt, pepper, parsley and seasoning. Stir to combine.
  • Step 5
  • To assemble: spoon a little sauce into the bottom of a 9x13 baking dish (or smaller individual foil loaf pans for freezing). Spread 2-3 tablespoons of ricotta filling over a noodle and roll up. Lay sideways in the pans (4 will fit in the loaf pans). Repeat with remaining noodles. Top with remaining sauce, mozzarella and Parmesan.
  • Step 6
  • If baking immediately, bake for 20 minutes or until hot and bubbly.
  • Step 7
  • If baking from a frozen state, bake covered in foil at 350°F for 30 minutes, then remove foil and continue baking for 15 minutes or until hot and bubbly.
