Ingredients: Layered meat Briyani

  • Rice
  • 5 cup Rice
  • 1 tsp salt
  • 2 stick cinamon
  • 1 tbsp coriander seeds
  • 2 Cumin pods
  • 2/3 cup Brown Lentils
  • 4 Large potatoes
  • 2 Generous pinch of Safron
  • 1/2 cup Ghee (Butter)
  • 1 1/2 kg Chicken or Lamb bone in
  • 2 Cloves
  • 2 Green chilli
  • Marinaide
  • 2 tbsp Crushed red chilli
  • 1 tsp Crushed garlic
  • 1 tbsp Crushed ginger
  • 1 tsp Tumeric
  • 1 tsp Mixed dried cumin seeds and coriander
  • 4 Cardamom pods
  • 1 1/2 tsp Ground dried coriander
  • 6 stick cinnamon
  • 1 1/2 tsp Whole dried cumin seeds
  • 1 cup Dried fried onions
  • 1/4 cup vegetable oil
  • 4 tsp lemon juice
  • 2 tsp Salt
  • 2 Green chillies
  • 4 Cloves

How to Make Layered meat Briyani

If you have prepared the ingredients needed, now time to start cooking. There are 12 steps you must follow to make Layered meat Briyani in your home by yourself.

    Step 1
  • Boil the rice with the above ingridients. ONLY COOK HALF WAY. Rinse the rice after cooking with cold water and set aside.
  • Step 2
  • Boil the lentils in salty water till soft, rinse with cold water and set aside.
  • Step 3
  • Add the Safron to 1/4 cup of water and let it soak for a minute.
  • Step 4
  • Add all the ingredients for the marinaide allong with 2/3 of the lentils and 1/2 of the Safron.
  • Step 5
  • Wash the meat and cut it in to the size you like. Add the meat to marinaide and set aside.
  • Step 6
  • Peel and quarter the potatoes, deep fry then till golden brown. Set aside to cool.
  • Step 7
  • Pre heat the oven to 180'C
  • Step 8
  • Melt 1/2 the ghee in a extra large oven proof pot. Line the bottom of the pot with some lentils and rice. Add the meat and potatoes, leave the marinaide behind in the bowl and mix it with 1/2 of the rice. Layer the marinated rice over the meat.
  • Step 9
  • Layer the rest of the white rice on top of the marinated rice. Sprinkle over the remainder of the ingredients. Safron, lentils, cloves, green chilli, ghee and some fried onions.
  • Step 10
  • Cover the pot with foil (shiny side down) and place the lid over the foil. Steam the pot in the oven for 60 minutes.
  • Step 11
  • Check if the meat is cooked after 60 minutes, if not return the pot to the oven until the meat is done.
  • Step 12
  • Once everything is done carefully separate the layers by dishing the white rice in to one side of the serving dish and the meaty rice on the other side of the serving dish. Serve with yoghurt and salad.
