  • 1 3/4 cup all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup agave or honey
  • 3/4 cup part-skim ricotta cheese
  • 1/4 cup water
  • 1/4 cup coconut oil, melted
  • 2 lemons zest
  • 2 tbsp fresh lemon juice
  • 1 large egg
  • 2 tbsp chia seeds

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Lemon Chia Seed Muffins in your home by yourself.

    Step 1
  • Preheat oven to 375^F. Line a muffin tin with paper liners or grease with coconut oil.
  • Step 2
  • In a large bowl, whisk together dry ingredients. In a medium bowl, mix together the remaining ingredients except for chia seeds.
  • Step 3
  • Make a well in the center of the dry ingredients, pour the wet ingredients in and mix with a wooden spoon. Be careful not to over mix. Gently fold the chia seeds into the batter.
  • Step 4
  • Divide batter evenly into muffin tin. Bake for about 16 minutes, until an inserted toothpick comes out clean.
