  • 16 oz. green lentils
  • 1 1/2 lbs Italian sausage
  • 1 medium onion diced
  • 1 bell pepper diced
  • 1 celery stalk diced
  • 1 carrot shredded
  • 1 zucchini halved and sliced
  • 4 Roma tomatos diced
  • 4 c veal (or chicken) stock
  • 2 cloves garlic
  • 1 tbsp fennel seeds
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 2-4 c water

How to Make Lentil and Sausage Soup

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Lentil and Sausage Soup in your home by yourself.

    Step 1
  • Brown sausage in a large pot over medium heat. Remove from pot and drain, reserving 1 tbsp of drippings
  • Step 2
  • Sautee fennel seeds in reserved drippings until aromatic about a minute or two
  • Step 3
  • Add onion, bell pepper, celery, carrot, garlic and sautee approximately 5 minutes until tender
  • Step 4
  • Combine sausage, sauteed veggies, and remaining ingredients with enough water to fill pot 2 inches from top and bring to a boil
  • Step 5
  • After 1 hour, place 2 cups of soup in a food processor, pulse until smooth, and return to pot. Reduce until desired consistency
