  • 1/2 cup cream or milk

  • 8 oz mushrooms, sliced
  • 30 oz lentils cooked in their water
  • 2 tbsp red wine
  • 1 tbsp soy sauce
  • 3 tsp Italian seasoning
  • 1/2 tsp thyme
  • 3 tbsp cornstarch
  • 10 oz spinach

How to Make Lentil shepherds pie

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Lentil shepherds pie in your home by yourself.

    Step 1
  • Cook and mash the potatoes with butter, milk and salt
  • Step 2
  • Preheat oven to 400°F
  • Step 3
  • Saute the onion in the olive oil til translucent.

  • Add garlic and mushrooms and cook til onion is golden
  • Step 5
  • Add lentils and their liquid and bring to a simmer. Stir in wine soy sauce and seasoning and cook for 5 min
  • Step 6
  • Add cornstarch
  • Step 7
  • Add spinach and cook til wilted then add to caserole dish. Top with mashed potatoes
  • Step 8
  • Bake 30 to 35 min then let stand 5 min before serving
