  • 1 3/4 cup all purpose flour

  • 1 FILLING....as follows
  • 1 1/2 cup fruit jam of your choice...(our favorite is raspberry or marmalade)
  • 1 1/2 tsp cornstarch
  • 2 tbsp lemon juice

  • Preheat oven 350°F
  • Step 2
  • TO MAKE PASTRY...
  • Step 3
  • cream butter, salt and sugar together until fluffy and a pale colour
  • Step 4
  • whisk egg in a small bowl
  • Step 5
  • slowly add egg to butter mixture a little at a time, mixing well
  • Step 6
  • sift flour over butter mixture, mix just until dough forms, don't over mix
  • Step 7
  • turn out onto lightly floured surface, cover and let pastry rest 20 - 25 min
  • Step 8
  • roll pastry to 1/4" thickness, cut out circles using a 1 1/4" round cutter
  • Step 9
  • line mini muffin tin with each circle of pastry
  • Step 10
  • TO MAKE FILLING...
  • Step 11
  • in microwave safe bowl, microwave jam 20 - 30 seconds or until softened
  • Step 12
  • stir in lemon juice and cornstarch
  • Step 13
  • fill each tart shell with about 2 tsp jam mixture
  • Step 14
  • bake 12 - 15 minutes or till pastry turns golden brown
