  • 2 1/2 lb medium potatoes, peeled
  • 1 cup evaporated milk
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 cup shredded cheddar cheese, divided
  • 6 slice bacon cooked, crumbled and divided
  • green onions or chives, chopped

    Step 1
  • Cut potatoes into 1 inch chunks and boil until almost tender. They will finish cooking in oven.

  • Drain potatoes and preheat oven to 350°F

  • Step 7
  • Bake for 20 to 30 minutes or until thoroughly heated and potatoes are tender.
  • Step 8
  • Top with additional cheese, bacon and onions.
  • Step 9
  • Cook 3 minutes or until cheese in bubbly and starting to slightly brown.
  • Step 10
  • Great make ahead meal. Before cooking or after.
