  • 1 cup leftover mashed potatoes
  • 1 cup frozen hash brown potatoes, thawed

  • 4 strips bacon, fried and crumbled
  • 1/4 scallions, chopped fine
  • 2/3 cup shredded cheese, I use colby jack or cheddar, but use whatever kind you like.
  • 1 salt and pepper to taste
  • 2 eggs, slightly beaten
  • 2 cup bread crumbs: plain, italian or panko. use whatever kind of bread crumbs you want.
  • 1 oil for frying, enough to cover fritters while deep frying.

    Step 1
  • Stir together both kinds of potatoes with flour. add salt and pepper to taste. Stir in bacon, cheese and scallions.
  • Step 2
  • Roll tablespoon of mixture into ball and dip in egg, then roll into breadcrumbs. Repeat with all of mixture.
  • Step 3
  • Deep fry at 350°F until brown and crispy on the outside.
  • Step 4
  • Remove from oil and place on paper towel to absorb excess oil from getting.
  • Step 5
  • Let cool several minutes before serving.
  • Step 6
  • Serve with ranch our honey mustard dipping sauce.
  • Step 7
  • Makes 20 fritters.
