  • Sift the flour and cocoa powder together twice, then set aside.

  • Mince the chocolate, add to a bowl, and melt over a hot water bath.

  • When the egg white forms peaks, add the remaining sugar. Beat until the meringue firmly stands even if you flip the bowl upside down.
  • Step 12
  • Add the chocolate to the meringue, and cut with batter as if writing the letter "J". Add the sifted powder ingredients.
  • Step 13
  • Once you finish mixing, it'll look like this.
  • Step 14
  • Pour into the pan and bake in the preheated oven for 30 to 40 minutes. If the top browns, cover with aluminum foil and continue baking.
