  • 240 g icing sugar
  • 125 g egg whites
  • 75 g caster sugar

How to Make Macaroons

    Step 1
  • Blend together the icing sugar and almonds then pass
  • Step 2
  • Whisk the egg whites until light and slowly add the sugar and continue whisking to a meringue
  • Step 3
  • Fold in the sugar and almonds mix and place in a piping bag
  • Step 4
  • Pipe out small discs and leave them out to dry a little. Then bake on about 130°C until risen and firm to touch
