Ingredients: Mandys Christmas soup

  • 4 tbsp oil
  • 2 lb turkey( im using leftovers from christmas )
  • 2 lb ham(using leftover from christmas dinner)
  • 3 cubes of vegetable /or chicken stock/bullion
  • 3 large carrots, peeled and chopped into chunks or slices
  • 2 large onion, chopped
  • 4 stick celery washed and chopped
  • 2 tbsp fresh thyme ,sage and parsley
  • 2 dry bay leaves
  • salt and pepper
  • 100 grams soften butter
  • 100 grams plain flour
  • 5 pints cold water
  • 2 cup frozen peas

How to Make Mandys Christmas soup

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Mandys Christmas soup in your home by yourself.

    Step 1
  • Chop Turkey,ham,carrots,onions,celery and fresh herbs
  • Step 2
  • In a large stock pot add 4 tablespoons of oil gently heat add chopped veg and saute for 5 minutes.
  • Step 3
  • Add fresh herbs and bay leaves saute for 2 minutes
  • Step 4
  • Add stock cubes ,Turkey and Ham cover with water and bring to a boil.
  • Step 5
  • In a small bowl blend butter and flour into a roux to thicken soup once veg is cooked to fork tender(10 minutes)
  • Step 6
  • Gradually add some for the roux and cook until u get the thickness u like u may need more or less it's Ur choice.(keep stirring until the roux blends into soup)
  • Step 7
  • Add two cups of frozen peas ,season with salt and pepper ,cooking for a further 5 minutes then serve with some crusty brown soda bread
