  • 2 lamb shanks
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp flour

  • 2 bay leaf
  • 2 parsnips chopped
  • 1 cup button mushrooms
  • 1 tbsp rosemary
  • 2 tbsp thyme
  • 4 pints hot chicken stock to cover lamb
  • salt and pepper
