  • 2 lb salmon fillets
  • 30 oz can ripe mango in light syrup
  • 2 tbsp olive oil
  • 1 dash chili powder to taste
  • 1 1/2 juice of lime
  • 1 dash pepper to taste
  • 1 dash salt to taste
  • optional:
  • 1/2 medium jalepeno pepper (seeded,stemmed and thin sliced)

    Step 1
  • preheat oven to 350°F
  • Step 2
  • place deboned,skinned salmon on a piece of aluminum foil large enough to fold into a packet.
  • Step 3
  • sprinkle salmon with salt and pepper on both sides.
  • Step 4
  • brush with half the lime juice.
  • Step 5
  • scatter jalepeno slices over salmon ( I omitted because I don't do spicy)
  • Step 6
  • drizzle a small amount of the mango syrup from the can over the jalepenos and salmon. about 2-3tbl.
  • Step 7
  • take mango ffrom can and thin slice it.
  • Step 8
  • cover entire salmon fillets with sliced mango.
  • Step 9
  • sprinkle chili powder across the mango to give a nice color and a very thin coating. if u want less use less.. more use more..
  • Step 10
  • drizzle with rest of lime juice.
  • Step 11
  • wrap and bake 35-40 minutes or until cooked through and fish flakes easily with a fork.
  • Step 12
  • open packet and place under broiler on low to give a nice color. about 2-5 minutes depending on your broiler.
  • Step 13
  • serve hot and enjoy!
