  • 3/4 cup Grated Mozzarella cheese
  • 3-4 tablespoons Grated Parmesan cheese
  • 2 tablespoons Chili flakes
  • 1 tablespoon Dried Oregano & Basil
  • 1 teaspoon Minced garlic
  • to taste Salt
  • 1 teaspoon Sugar

  • 2 Eggs
  • 4 tablespoons Cornflour
  • 2 tablespoons Rice flour
  • to taste Salt and pepper
  • Oil for deep frying

    Step 1
  • Slice the tomatoes into rings, neither too thick nor too thin. 4 tomatoes should yield about 30-32 rings.

  • Sprinkle salt and sugar and toss well. Keep aside for 5-7 minutes.

  • In the meantime mix the Mozzarella, Parmesan, garlic, chili flakes, herbs (you can use a mix of oregano and basil).
  • Step 4
  • Now take two tomato rings. Place a generous amount of the cheese mix on one ring and cover with the other slice, like a sandwich.
  • Step 5
  • Prepare the batter by beating the eggs well and then whisking in the cornflour and rice flour along with the salt and pepper. The batter wont be to thick.
  • Step 6
  • Heat oil in a pan. Dip each tomato cheese into the batter and ease into the oil once its ready. Fry until a beautiful golden, on medium - medium low heat. Turn up the heat while taking the fritters out of the oil.
