  • 2 lb fresh green beans trimmed
  • 1 1/2 tsp salt, divided
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 cup kalamanta olives, sliced
  • 2 tomatoes, seeded & chopped
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh oregano, finely chopped
  • 1/4 tsp pepper
  • 2 4 oz. packages, crumbled feta cheese

How to Make Marinated Green Beans with Tomatoes & Olives

    Step 1
  • Place beans in boiling water seasoned with 1 teaspoon of salt. Cook 6-8 minutes or until crisp-tender. Drain, then plunge beans in ice cold water to stop the cooking proceess. Place in a shallow serving dish.
