  • 10 pimento stuffed green olives
  • 5 oz crumbled feta cheese
  • 1 clove of garlic, grated
  • 1 tsp sea salt
  • 2 tbsp freshly chopped flat leaf parsley
  • 2 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 4 oz shredded cooked chicken( optional )

    Step 1
  • In large pan, bring vegetable broth to a boil.
  • Step 2
  • Add cous cous and parsley.
  • Step 3
  • Turn off heat, cover, and let it sit for 5 minutes.

  • While it absorbs liquid, cut up roasted pepper and grate garlic. Slice onions too.
  • Step 5
  • Once 5 minutes pass, add all ingredients into pan with cous cous.
