Ingredients: Mediterranean orzo salad

  • 2 red peppers / small diced
  • 1 medium onion/ small diced
  • 25 pitted kalamatta olves/chopped
  • 5 oz crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tsp salt
  • 1 a few grinds of fresh bkack pepper
  • 1 lb box of orzo pasta
  • 1/8 cup white balsamic vinegar
  • 1 tsp red pepper flakes/ optional

How to Make Mediterranean orzo salad

If you have prepared the ingredients needed, now time to start cooking. There are 2 steps you must follow to make Mediterranean orzo salad in your home by yourself.

    Step 1
  • cook orzo according to package directions. Drain pasta when cooked and place in large serving bowl.
  • Step 2
  • Add to pasta the chopped onions, peppers, olives and feta. Toss in salt, pepper, oil and vinegar. Also add pepper flakes if using. Mix salad well and chill for about 1hour. Enjoy!
