Ingredients: Mediterranean Salad

  • 1 lb box of orzo pasta
  • 2 red bell peppers, seeded and diced small
  • 3/4 cup kalamatta olives, pitted
  • 6 green onions, thin slice
  • 6 oz crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine viegar
  • 2 tsp salt
  • 1 tsp ground pepper
  • 3 clove of garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp red pepper flakes( optional)
  • 1 anchiove fillet ( optional) finely chopped

How to Make Mediterranean Salad

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Mediterranean Salad in your home by yourself.

    Step 1
  • In large pot of salted boiling water, cook orzo for 8-10 minutes or until desired doneness. Drain.
  • Step 2
  • In another bowl mix garlic, salt and pepper ,anchiove and pepper flakes if using , oil and vinegar. Set aside.
  • Step 3
  • Into pasta add peppers, onion, olives, and feta. Toss in oil and vinegar mixture. Toss well and add parsley last.
  • Step 4
  • Can serve warm or refrigerate one hour before serving.
  • Step 5
  • This is delicious served along side of grilled meats.
