  • 2 to 3 Potatoes
  • 1 Mentaiko
  • 6 tbsp Mayonnaise
  • 2 tbsp Plain yogurt
  • 1/4 Carrot
  • 1 Cucumber
  • 1 tsp Soy sauce
  • 1 dash Pepper
  • 1 Loose leaf lettuce, cherry tomatoes

How to Make Mentaiko Potato Salad

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Mentaiko Potato Salad in your home by yourself.

    Step 1
  • Wash the potatoes well, then boil for 10 minutes with the skins on. This will make them more delicious. When a skewer can easily pass through, they're ready!
  • Step 2
  • If you use a microwave, it's even easier. Wrap the damp potatoes up in plastic wrap and heat for about 5 minutes.
  • Step 3
  • Peel the potatoes while still hot to cleanly peel. It's hot, so wrap them up with paper towels while you work.
  • Step 4
  • Mash the potatoes. Use an egg cutter like in the picture to make it easy.
  • Step 5
  • Mash the potatoes well, but don't knead. Let cool, then add all the seasoning ingredients.
  • Step 6
  • Slice the cucumbers, sprinkle with 1 teaspoon of salt, and let sit for about 10 minutes. Squeeze well to remove the excess moisture. Peel the carrots, thinly slice, and boil for 3 minutes.
  • Step 7
  • Peel and squeeze the mentaiko (here's one fish's worth shown in the photograph).
  • Step 8
  • Squeeze the cucumbers well, then add to the potatoes. Add the mentaiko and carrots as well and toss gently.
  • Step 9
  • Transfer to a plate with some loose leaf lettuce. Garnish with cherry tomatoes and serve.
