  • 4 oz caster sugar

How to Make Meringue

  • Preheat the oven to 140C/275F/Gas Mark 1
  • Step 2
  • Grease a tray with greaseproof paper
  • Step 3
  • Whisk egg whites with electric whisk at top speed
  • Step 4
  • You know when its ready because you can tip the bowl over your head without the eggs sliding
  • Step 5
  • Pour in the sugar about a table-spoon at a time, and whisk
  • Step 6
  • Whisk in the sugar, but not at full speed
  • Step 7
  • When all the sugar is in give it a final whisk until its glossy and stands up in peaks
  • Step 8
  • Bake in the oven for 2 hours
  • Step 9
  • Take the meringues out the oven, and leave them for a few hours to dry out
