  • 2 cup Cooked Rice
  • 2 cup Sliced Vegetable (i.e. Zucchini, Spinach, Squash)
  • 1 can Black Beans
  • 1/2 tsp Cumin, Onion Powder, Cayenne, Pepper
  • 1/2 cup Cilantro
  • 1 Tortilla Chips
  • 1/2 cup Enchilada Sauce
  • 1 cup Cheddar Cheese
  • 1/2 cup Guacamole

How to Make Mexi Bowl

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Mexi Bowl in your home by yourself.

    Step 1
  • Place beans in a pot with a 1/4 cup water and all seasonings. Stir and simmer for 5 minutes until softer.
  • Step 2
  • Divide rice in two bowls.
  • Step 3
  • Optional: To make a more complete meal you can add a vegetable. I added chopped spinach and placed it between the rice and beans.
  • Step 4
  • Top with beans and cilantro
  • Step 5
  • Top with tortilla chips. Drizzle on sauce. Top with cheese.
  • Step 6
  • Heat in microwave for 1 1/2 minutes.
  • Step 7
  • Put a dollop of guacamole on top.
  • Step 8
  • Option: Add a dollop of sour cream
