Ingredients: Mexican Casserole

  • 12 corn tortillas
  • 1/2 C green chile enchilada sauce
  • 1 C black beans
  • 1 C Rotel mild diced tomatoes with green chillies
  • 1 C Mexican blend shredded cheese
  • 1/2 lb. ground turkey
  • 1 small green bell pepper (diced)
  • 4 cloves garlic chopped
  • Green onion to top
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • 1 tbsp. onion powder
  • 1 tbsp. oregano
  • Olive oil

How to Make Mexican Casserole

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Mexican Casserole in your home by yourself.

    Step 1
  • Sauté garlic and bell pepper for a few minutes then add ground turkey and all seasonings. Brown meat.
  • Step 2
  • Add black beans and diced tomatoes (drain some of the liquid from cans first). Simmer about 10 minutes to let flavors mix and thicken a bit.
  • Step 3
  • Coat a baking dish with 1 tbsp. olive oil. Poor a little bit of green chile enchilada sauce in the bottom of dish to cover. Lay tortillas evenly (I used 6).
  • Step 4
  • Spoon some of the meat and bean mixture on top of the tortillas to cover one layer. Lay 6 more tortillas on top and poor a little green sauce on top of tortillas. Layer again with meat mixture.
  • Step 5
  • Add cheese and green onions. Cover with foil. Bake at 350 for about 20 minutes.
