  • 2 1/2 cups chopped cooked chicken
  • 1 can (11 oz) whole kernel sweet corn (with sweet peppers if you can find it)
  • 1 can (10.75 oz) cream of potato or cream of chicken soup
  • 1 can (4 oz) diced green chiles
  • 2 tablespoons snipped fresh cilantro
  • 1/2 package taco seasoning
  • 1 can (14.5 oz) chicken broth
  • 1 cup water
  • 1 cup fat-free sour cream
  • 1/2 cup shredded cheddar cheese

How to Make Mexican chicken chowder

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Mexican chicken chowder in your home by yourself.

    Step 1
  • In a large saucepan combine chicken, corn, soup, Chili's, cilantro, taco seasoning, chicken broth and water. Bring to a boil, then reduce heat, cover and simmer 15 minutes. you may keep this warm in a crockpot on low.
  • Step 2
  • Stir one cup of the hot soup to the fat free sour cream once well mixed return this to the large saucepan and heat
  • Step 3
  • Sprinkle each serving with some cheese and serve with baked tortilla chips
