  • 2 stick butter
  • 3/4 cup sugar
  • 4 eggs
  • 1 cup cheddar cheese (shredded)
  • 4 oz can diced green chili's
  • 1 cup flour
  • 1 cup cornmeal
  • 1 16 ounce can creamed corn
  • 1/4 tsp salt
  • 4 tsp baking powder

How to Make Mexican Corn Bread

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Mexican Corn Bread in your home by yourself.

    Step 1
  • Cream the butter and sugar together
  • Step 2
  • Beat in the eggs.
  • Step 3
  • Add the cheese and green chili's.
  • Step 4
  • Stir in the flour, cornmeal, creamed corn, salt and baking powder.
  • Step 5
  • Bake at 350 for 50 minutes or until done. It should be golden brown and a toothpick should come out clean.
  • Step 6
  • I use a 12" cast iron pan for this recipe. I also use a little more sugar to sweeten it up.
