  • 4 oz cream cheese, room temperature, whisked smooth
  • 8 oz grated cheese (I use Cotija from the Mexican Store)
  • 1 zest of 1 lime
  • 2 to 3 teaspoons green jalapeño sauce (I use poblano)
  • 1 salt to taste
  • 1 pepper to taste
  • 1/4 cup cilantro leaves
  • 1/4 cup chopped toasted almonds
  • 2 green onions, cleaned, cut into very thin rounds, rinsed and dried

  • Make tomatillo salsa.
  • Step 2
  • Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.

  • In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeño sauce.
  • Step 4
  • Season to taste with salt and pepper.

  • Place in refrigerator to chill for 20 minutes.

  • In a separate bowl, mix cilantro and almonds together.
  • Step 7
  • Remove cheers from refrigerator and form it into a large ball.
  • Step 8
  • Coat the ball evenly with the cilantro/almond mix.

  • Wrap in plastic wrap and chill until serving.

  • Serve with your favorite crackers, crudites, etc.
