  • 3 Tablespoons extra-virgin olive oil
  • 2 pounds ground meat (Chicken, turkey or beef)
  • 2 Tablespoons chili powder
  • 1 cup medium heat taco sauce
  • 1 cup frozen corn kernels
  • 8 (8 inch) flour tortillas
  • 2 cups shredded cheese
  • 1 box rice (4 cheese rice)

How to Make Mexican Lasagna

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Mexican Lasagna in your home by yourself.

    Step 1
  • Cook rice as directed on box
  • Step 2
  • Cook ground meat in skillet, season meat with chili powder
  • Step 3
  • Once meat is cooked add Taco Sauce and corn (~3 min)
  • Step 4
  • Pre-heat Oven 425
  • Step 5
  • Add cooked rice
  • Step 6
  • Coat 9 X 13 pan with extra virgin olive oil
  • Step 7
  • Place 2 tortillas in the bottom, then layer the meat and rice, then Cheese and reapeat
  • Step 8
  • Bake in oven for 12-15 minutes
