  • 1 tbsp oil
  • 1 cup quinoa
  • 1 cup veggie broth
  • 15 oz cooked black beans
  • 14 oz tomatoes diced
  • 1 cup corn
  • 1/2 tsp cumin
  • to taste salt and pepper
  • 1 avocado diced
  • Juice of 1 lime

How to Make Mexican Quinoa

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Mexican Quinoa in your home by yourself.

    Step 1
  • Saute garlic in oil over medium high heat for about a minute
  • Step 2
  • Stir in quinoa, broth, bean, tomatoes, corn, cumin, salt and pepper.Bring to a boil then reduce the heat and simmer until quinoa is cooked through, about 20 minutes
  • Step 3
  • Stir in avocado and lime juice
