Ingredients: Mexican Zucchini Lasagna

  • 1 lb ground beef
  • 1 large diced onion
  • 1 cup diced red, green, and yellow pepper
  • 1/4 cup chopped fresh cilantro
  • 2 cups diced zucchini and yellow squash
  • 1 Tbsp minced garlic
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp Cayenne powder
  • 1 can green chilies
  • 1 can black beans, rinsed and drained
  • 2 cans rotel (1 Mexican, 1 regular)
  • Corn tortillas
  • Cheese

How to Make Mexican Zucchini Lasagna

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Mexican Zucchini Lasagna in your home by yourself.

    Step 1
  • Preheat oven to 350°F. Brown hamburger with onion, over high heat, add peppers, cilantro, zucchini, garlic and spices. Add green chiles and black beans, stirring to mix throughly, add rotel and mix thoroughly.
  • Step 2
  • Spray or lightly grease a 9 x 12 casserole dish. Lay tortillas on bottom and sides. Sprinkle with cheese. Place half of mixture in casserole dish. Layer with more tortillas, add the remainder of beef mixture and sprinkle with cheese. Bake till cheese melts, and is hot through.
  • Step 3
  • Serve with sour cream and guacamole.
