  • flat bread
  • 1 cup water heated to 110 degrees
  • 2 1/4 tsp dry active yeast
  • 1/2 tbsp molasses
  • 3 cup flour
  • 1 1/2 tsp salt
  • 2 tbsp olive oil
  • zaatar
  • 1/4 cup sumac seasoning
  • 3 tbsp turkish oregano
  • 3 tbsp thyme
  • 1 1/4 tsp sea salt
  • 2 tbsp sesame seeds
  • 1/2 cup extra virgin olive oil

    Step 1
  • Combine water, molasses and yeast. Set aside for 5 minutes to let yeast activate and become foamy.

  • Add yeast to dry ingredients in a large mixing bowl. Gradually add oil as it mixes.

  • Knead dough by hand or with hook attachment for 10 minutes.

  • Take dough form into a ball and place in lightly greased bowl and cover with plastic wrap.

  • Divide dough into 6 pieces. Roll into balls then roll out into 8" rounds. Use your finger to dimple the top of dough. Repeat with remaining dough. Cover and rest 15 minutes.

  • Place on oiled baking tray and cook for 10 minutes.
  • Step 9
  • Remove and add zaatar seasoning mixed with oil. Divide zaatar amongst 6 breads.

  • Cook another 8 minutes.
