Ingredients: Migas

  • breakfast
  • 4 corn torillas cut up in strips or torn
  • 4 eggs
  • 1 jalapeno
  • 1/2 cup rotel or diced tomatoes
  • queso fresco
  • 1/2 avocado sliced
  • salt and pepper
  • 1 1/2 tbsp lard

How to Make Migas

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Migas in your home by yourself.

    Step 1
  • Heat lard , add tortilla strips cook until brown and toasty. Remove and drain on paper towel sprinkle with salt.
  • Step 2
  • Add rotel ( or diced tomatoes) and peppers. Saute Until 75% of liquid has evaporated. In a separate bowl whisk up eggs and add to pepper and tomato combo.
  • Step 3
  • Cook the mixture on medium heat, allow eggs to set, add tortilla strips the last 2 minutes of cooking so they do not become soft.
  • Step 4
  • Top with crumbled cheese and sliced avocado.
