Ingredients: Mike's Spicy Plum Sauce

  • Plum Sauce
  • 10 large Ripe Plums [de-seeded/pitted]
  • 1/4 cup Water [or less - for blending plumbs]
  • 3/4 cup Fine Minced White Or Purple Onions [packed]
  • 1 1/2 tbsp Fresh Fine Minced Garlic
  • 1 tsp Fresh Fine Minced Ginger
  • 1 large Finely Minced Jalapeño [de-seeded - optional]
  • 1/4 tsp Orange Extract [or 1/2 tsp fresh orange zest]
  • 4 Minced Thai Chilies
  • 1 tsp Red Pepper Flakes
  • 2 tbsp Sweet Chili Sauce
  • 1/4 tsp Black Pepper
  • 1/4 cup Granulated Sugar [or more to taste]
  • 1/4 tsp Vinager [or 1/4 tsp more to taste]
  • Thickener
  • 2 tbsp Corn Starch [+ 1 tablespoon water - to thicken sauce]

How to Make Mike's Spicy Plum Sauce

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Mike's Spicy Plum Sauce in your home by yourself.

    Step 1
  • Clean, split and de-seed your plums.
  • Step 2
  • Blend all pitted plums with 1/4 cup of water or, less. That'll depend upon how juicy your plums are. Use as little water as you possibly have to. Add a couple drops red food coloring if you'd like your sauce a bit more vibrant.
  • Step 3
  • Place mixture in a semi large pot on the stove.
  • Step 4
  • Fine mince garlic, chills, ginger and onions and add to the plum pot. Add all other spices listed as well.
  • Step 5
  • Simmer sauce for 30 minutes on low. Watch it closely tho. You don't want the onions, chillies and garlic dropping to the bottom and scortching.
  • Step 6
  • To thicken sauce: Bring sauce to a boil. Mix well 2 tablespoons corn starch and 1 tablespoon water. Slowly add mixture to boiling sauce. Add 1/2 first - mix sauce - wait a second to see if the consistency is where you want it. Then, add the rest if you want your sauce thicker.
  • Step 7
  • Serve warm. Enjoy!
