  • 4 Chicken Breasts [cubed]
  • 1/2 large Each: Green - Red - Orange - Yellow Bell Peppers [chopped]
  • 1 medium White Onion [chopped]
  • 1 large Jalapeño [chopped]
  • 1 can Black Beans [drained]
  • 1 cup Fresh Cilantro
  • 1/2 Tomato [diced & deseeded]
  • 1/3 cup Corn
  • 3 tbsp Salsa [your choice]
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Chili Powder
  • 2 tbsp Fresh Garlic [crushed & chopped]
  • 1 tsp Cumin
  • 1 large Bag Mexican 3 Cheese Or Pepper Jack
  • 8 6" Flour Tortillas
  • Sides & Garnishments
  • 2 large Avocados [sliced]
  • 2 large Limes [quartered]
  • 1 Reserved Fresh Cilantro
  • 1 Reserved Bell Peppers
  • 1 Reserved Cheese
  • 1 tub Sour Cream
  • 1 Bottle Salsa
  • 1 Guacamole

How to Make Mike's Spicy Southwestern Wraps

If you have prepared the ingredients needed, now time to start cooking. There are 12 steps you must follow to make Mike's Spicy Southwestern Wraps in your home by yourself.

    Step 1
  • Reserve some of your Bell Peppers, Cilantro and cheese for toppers and garnish.
  • Step 2
  • Add everything under Wraps section in a large non stick pan with 1 tbs oil. Fry until chicken is fully cooked.
  • Step 3
  • Generously pile cheese on Tortilla.
  • Step 4
  • Add chicken mixture on top of cheese.
  • Step 5
  • Top with cheese again.
  • Step 6
  • Roll Tortilla and secure with a toothpick. If using egg roll wraps, coat outer sides with egg wash to seal. [two eggs beaten]
  • Step 7
  • Spray Pam dish and place side by side.
  • Step 8
  • Cover with cheese and garnishments.
  • Step 9
  • Bake in a 350° oven for 25 minutes. If using egg roll wraps, turn once during baking.
  • Step 10
  • Pull out toothpicks!
  • Step 11
  • Cut wraps at an angle and serve.
  • Step 12
