  • 1 red onion, chopped
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 2 tbsp lime juice
  • 1 tbsp lemon juice
  • 1 tbsp salt
  • 1 clove crushed garlic
  • 1/4 cup chopped fresh cilantro
  • 1/2 tbsp cumin
  • 2 tbsp sugar
  • 1/2 tbsp black pepper
  • 1/2 tsp chili powder
  • 1 dash (or more-to your liking) hot sauce

How to Make Mimi's Bean salad

  • In a large bowl combine beans,bell peppers, frozen corn and red onion.
