  • 8 clove garlic sliced
  • 1 onion diced
  • 1 large zucchini small dice
  • 1 large yellow squash small diced
  • 1 cup green beans chopped
  • 1 quart diced tomato
  • 1/2 cup chopped fresh oregano
  • 1/2 cup fresh basil
  • 1 gallon vegetable stock
  • 1 lb small pasta (orzo, ditalini )
  • 1 salt pepper garlic powder to taste
  • 1 shaved parmesan for garnish

How to Make minestrone

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make minestrone in your home by yourself.

    Step 1
  • heat oil in a heavy sauce pot
  • Step 2
  • add garlic first then all veggies except diced tomatoes
  • Step 3
  • sweat the veggies for about 10 minutes
  • Step 4
  • add tomatoes oregano and veg. stock . bring to a boil and reduce to a simmer for about an hour and a half
  • Step 5
  • mean while cook the pasta and rinse with cold water ( mix a little oil to prevent sticking )
  • Step 6
  • taste your soup and adjust the flavour
  • Step 7
  • place a small portion of pasta in a soup bowl and fill the rest with your delicious soup
  • Step 8
  • garnish with shaved parmesan and devour :)
