  • 2 lb lean ground beef
  • 1 medium onion, chopped
  • 2 packages Taco seasoning
  • 1 can rotel
  • 1 can cream of onion soup
  • 1 can cream of chicken with mushroom soup
  • 1 can enchilada sauce
  • 12 corn tortillas
  • 1 1/2 cup crushed nacho cheese doritos
  • 1 1/2 cup shredded monterey jack cheese
  • 2 cup shredded sharp cheddar cheese

How to Make Mom's Mexican Casserole

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Mom's Mexican Casserole in your home by yourself.

    Step 1
  • Preheat oven to 350
  • Step 2
  • Brown ground beef with onion
  • Step 3
  • Add taco se├ásoning, salt and pepper if needed as well
  • Step 4
  • In a separate pan heat rotel, both soups, and enchilada sauce together until blended smoothly
  • Step 5
  • In a 9X13 casserole dish, spray with non stick oil, lay six corn tortillas down on bottom of pan
  • Step 6
  • Take half of the seasoned ground beef and spread on tortillas, then half of the sauce mixture on top of beef
  • Step 7
  • Then add the other 6 tortillas, beef, and sauce again
  • Step 8
  • Bake for 30min, then add your crushed doritos and cheddar and Monterey jack cheese, bake for another 15min until melted and bubbley
  • Step 9
  • Spoon it out and top it off with some fresh tomatoes and sour cream
