  • 4 cup rice
  • 2 onion
  • 5 tomatoes
  • 1 clove garlic
  • 1 ginger
  • 2 1/2 large carrots
  • 1 cup peas
  • 1 mushrooms
  • 1 can kidney beans
  • 1 kg smoked ham
  • 1 stock beef stock
  • 2 tbsp salt
  • 1 pinch fresh thyme
  • 1 pints vegetable oil
  • 3 tbsp tomato puree
  • 2 1/2 cup water

How to Make Moms Special Jollof rice

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Moms Special Jollof rice in your home by yourself.

    Step 1
  • dice onions, tomatoes ,ginger, and garlic finely
  • Step 2
  • chop carrots
  • Step 3
  • add oil to a large pan, then fry garlic, ginger and onion until golden brown
  • Step 4
  • add smoked ham n fry for 3 mins
  • Step 5
  • then add tomatoe puree
  • Step 6
  • fry until mixture thickens up then add beef stock and tomatoes
  • Step 7
  • leave to cook for about 12 mins unt stew thickens
  • Step 8
  • then throw in your peas , carrots, thyme, salt ,kidney beans and water
  • Step 9
  • then finally add your rice to the mixture and let simmer on a very low heat for about 20-25 mins until rice cooks
